EWE- Zucchini corn and spinach saute

Its Thursday and that means I cook something delicious with my eating with Ellie Kreiger group.   This week chaya from our group chose the  zucchini corn and spinach sauté found in Ellie Kreigers Week Night Wonders book.   I love zucchini so I am always looking for different ways to prepare it.  The addition of corn onions garlic and spinach made this a delicious side dish that would go with pretty much anything!   Come join us each thursday for delicious and healthy food! WWDH - Poached Chicken in Coconut Milk

I did not really want to make this because it just frankly did not appeal to me looks wise.  but I was anxious to get back to cooking so I decided today was the day.   For those of you who follow my blog and do not know my situation, I have had a biopsy and two surgeries in the last two weeks.  I am doing well, but having anesthesia twice in a week has left me without a lot of energy.  Plus I am healing so my body is working hard toward that!  I will be having rads in the coming weeks.  Not looking forward to that! after searching in the store for red curry paste and finding it, I was dismayed when I started cooking this to discover it contained shrimp which I am allergic to.  So I had to make a quick decision for a suitable substitute.   i used sirachi sauce and added some red pepper flakes.  It was delicious!   We were really surprised how good this was.   served over rice.   I really cannot imagine it being much better with the curry paste.   come join us in cooking Donna Hay

EwE - Peach Chicken with Crispy Breadcrumbs

This week in our Eating with Ellie group it was my pick.   I chose this chicken with peaches.   Even though peaches are not in season, the recipe states that frozen ones can be used.   this chicken was tasty but it was not a favorite for me.  it was an easy preparation as are most of Ellie's recipes.   You cn find this recipe in Ellie's Weeknight Wonders book.  Our group does not publish the recipes out of respect for the author.   come join us as we cook each Thursday! ewellie.wordpress.com

EwE - Crispy Parmesan Chicken Breasts

first, thank you to everyone who has been praying for me and supporting me!    Now about this chicken!   I was not prepared to like this.   I do not care for parmesan cheese nor do i care for dijon mustard.   I tried baking this in the oven first but i then had to take it out and skillet cook it in order to get that crunchy parmesan topping ellie talks about in her recipe.   The chicken breasts were huge so i always slice mine in half.   They cook much quicker that way and they are just the right size for serving.  Margaret at teaandscones.wordpress.com  chose this and I thank her because I will be making this one over and over!   You can find this recipe in Ellie Kreigers Weeknight Wonders cookbook.   Check out our website for more delicious Ellie ideas!   Ewellie.wordpress.com

Eating With Ellie - Chicken Paprikash

Kayte chose this dish from Ellie's Weeknite Wonders cookbook.  Our group enjoys cooking each week together and discovering new and healthy foods.  I was not sure we would like this particular dish, but boy was I wrong!  It will definitely be a repeat at our house.  And very easy to prepare.  I left out the bell pepper because that just is not a favorite for us.  Basically you just cut up some chicken thighs (I used breast instead) and saute the chicken with onions, bell pepper and garlic, then adding some paprika (I used smoked paprika, but a sweeter one would also work well), some chicken broth and sour cream.  It called for cayenne but I was out of that so I used a few squirts of Sirachi Sauce from my refrigerator.  Everything is better with Sirachi Sauce, right?  Then you serve it up over some egg noodles and you have a delicious dinner!  We added some brussels sprouts for a side dish to ours.  When my DH came home from work, the first words out of his mouth were "somet

WWDH - Too Easy Blueberry Muffins

T There is nothing better than the smell of warm blueberries wafting through your house.  These are wonderful and easy to prepare.   Who wouldn't want to wake up to these for breakfast or brunch, or even just for an afternoon snack with your cup of tea?   This is a Donna Hay recipe chosen in our group this week by Chaya of Bizzy Bakes .   These have very simple ingredients that most of us have in our pantry already.  And plenty of frozen blueberries.  Check out our website and see how the others did with their muffins. https://wwdh.wordpress.com/
