Apparently it all began in Derbyshire, England. I had no idea it was popular with <span style="-webkit-text-size-adjust: 100%; box-sizing: inherit; font-style: italic; letter-spacing: 0.25600001215934753px; text-align: center;">The Great British Baking Show. </span><span style="-webkit-text-size-adjust: 100%; box-sizing: inherit; letter-spacing: 0.25600001215934753px; text-align: center;">This classic </span><span style="-webkit-text-size-adjust: 100%; background-color: white; letter-spacing: 0.25600001215934753px; text-align: center;">combines a buttery shortcrust pastry with a filling of raspberry jam, (or in my case blackberry jam), topped with an almond spongecake and almond slices. I think there are probably many different versions of the Bakewell.</span></span></p><p style="text-align: left;"><span style="font-family: arial; font-size: large;"><span style="-webkit-text-size-adjust: 100%; background-color: white; letter-spacing: 0.25600001215934753px;">On my first attempt, my crust totally fell apart in the oven. At that point, I went to plan b and made four mini tarts. These worked perfectly for us. I have a very thin layer of the jam and wish I had used a bit more. We are muffin lovers. Love them with breakfast or just as a snack. These muffins presented me with a challenge because they called for oats and I am allergic. So I substituted raisin bran cereal for the oats and it worked beautifully. However, after putting these in the oven, I ate some leftover sunflower seeds and had a reaction. So I will have to make these again and leave out those seeds! I have never heard of a sunflower seed allergy but apparently…have you? I also added some pecan chips to these because I love nuts in everything. My husband who is a great taste tester for me says these are great! I chose to make a holiday bread using the fresh cranberries that were included in my vege coop this week. The recipe I used is below.</span><p></p><p><span style="font-size: large;">The recipe made two loaves so I took one to a friend and kept the other for us to enjoy. It is an easy recipe except chopping those cranberries proved a challenge. I did it by hand and they kept rolling off the cutting board. Quite amusing! This seemed like a pretty bread for the holidays! I had never used rye flour before so this was a first for me. The problem was finding it in stock. I think I visited five or six local grocery stores before finding it. Sprouts had one bag left and I got it!</span><p></p><p><span style="font-size: large;">These cookies were easy to make and with the holidays upon us, I am really into making cookies. These did not disappoint! My husband and I loved them! The cranberries, the chocolate and the rye flour came together to make one awesome cookie! The rye flour gives a bit of nutty taste. Winner for us! I wanted to do something with squash because I pretty much love all things squash. This is a very simple recipe. The hardest part is cutting up the butternut squash. But believe me it is worth it! I might cut down on the sugar when I make it again. I could not believe how easy it was to make this. It is a beautiful dessert. I decided to try this recipe because my husband loves salmon! Even though I have a shellfish allergy I thought I could eat this. One bite told me I cannot! This was an easy chicken dish to prepare and delicious! It called for chopped black olives but I substituted kalamata and that worked well for us. I searched through Donna Hays internet recipes and found this one. It did not disappoint! We served it with a nice filet and baked potato. It is also very easy to make. The tomatoes are mixed with sat, pepper and brown sugar. The eggplants are drizzled with olive oil. After baking thirty minutes you top with sourdough croutons, oregano leaves and smoked mozzarella. Then serve with a drizzle of pesto. It was a very nice side dish. I made Ellie Krieger’s carrot soup. You can find this recipe in her book called <i>Weeknight Wonders</i>. I really do not think I have ever made a cream type soup. We are more the chunky meat and vegetables type of soup eaters. But I really wanted to try this and I was not disappointed. This soup is creamy and tasty. It is a mixture of carrots, garlic, onion, ginger, honey and cashews cooked in chicken broth. Once cooked, Ellie said to puree in blender in four batches. Well I thought why do it in four batches when I could do it in two? There is a reason for sure. If you could see my kitchen right now you would understand. Lesson learned, listen to the experts and follow their directions. My first touch of the switch blew the lid off my blender along with about a third of the soup! So then I scooped out a bit and tried again only to have the same thing happen! Then I got smart and put a towel over the lid and held it down while I pureed, that worked. </span></p><p><span style="font-size: large;">We devoured the soup for our lunch. My only issue is for me, I felt like I needed a sandwich or salad to go with it. No problem! I chose to do a beef stew that incorporated butternut squash. You could use any other winter squash I am sure. The stew has simple ingredients and was easy to prepare. I thought we would have enough for two meals, but we ate it all! We had some delicious crusty garlic bread to go with it. When Ulrike chose parsnips as our vegetable this week, I was thinking they were like carrots. I also had no idea how to cook them so I looked on Pinterest for some ideas. I decided just to roast them because I love roasted vegetables! Sprinkle 1 T Italian seasoning over. Sprinkle 1/2 cup grated parmesan cheese. I love sweet potato casserole with pecans, brown sugar and even mini marshmallows on top. I love candied sweet potatoes. It is so amazing to me. Nothing brings me peace like sitting listening to the waves crash against the shore. We saw a pretty big shark one morning. I will admit I may have put a tad too much soy sauce because I did not measure it out. This was supposed to be a main course. We had some baked chicken along side it. Would I make it again. No. The flavors of the ingredients just did not mix well for me. But to each their own and there is someone out there who would truly love this. This week our focus is on spinach, which I chose for our Good Friends Good Food group. There are so many different wonderful salads that can be made with fresh spinach. Lately I have also been making us a lot of spinach egg white omelets. I also love spinach in quiche. But this week, its spinach salad. I love salads that include lots of good ingredients. I used my imagination on this one. I will say if I made it again I might leave out the slivered parmesan. We love asparagus and there were lots of creative options out there from which to choose. I decided to go with a roasted asparagus salad topped with a Caesar like dressing. Due to allergies I had to leave out the anchovy paste. Mine tasted a bit more like buttermilk dressing than Caesar but was still delicious. It was easy to prepare and delicious to eat!</span><span style="font-size: large;"><br /></span></div><div><span style="font-size: large;">Recipe</span></div><div><span style="font-size: large;">I used about a pound of fresh asparagus and roasted it in the oven at 350 degrees until fork tender. Took about 20 minutes.
