TWD - Chocolate Mini Bundt Cakes

Or, if you don't have mini bundt cake pans - use jumbo muffin pan like I did! I did not, however, have enough batter for six cakes as the recipe said I would. I only had enough for five. I also had to cook them a bit longer than the recipe commanded. I ran out of chocolate so they are glazeless - but Dorie herself said I could dust them with confectioner's sugar if I wanted to! I made the decision that I did want to do that when I realized I was out of chocolate!!

Tuesdays with Dorie - I've been a bit lapse. This week Im Right About Everything chose a delicious recipe for us to try so out of respect I got off my rear, pushed aside my Bejeweled game, and went to the kitchen and made it. I'm' glad I did. You should click on the link and check out her blog and get the recipe there for these delicious mini bundt cakes.

Unfortunately, mine are not as pretty as they would have been in a mini-bundt pan and a nice chocolate glaze would have accessorized these nicely as well.

I saw The Lovely Bones this weekend and I recommend this movie to anyone that read the book. It was portrayed very well. I'm still wanting to see Avatar. Maybe next week. . .

Oh- I love Bejeweled too! Also like powdered sugar on chocolate. That's the way my mom always did our brownies so these look terrific to me.

I am glad to know that these turn out nice, big, jumbo muffins! Great idea.
I think a little sprinkle of powdered sugar makes them look delicious.

Bejeweled Blitz, oh how I love thee.

I tweaked the recipe just a bit, and only got 3 muffins out of it.

Yours look lovely! Jumbo muffins is a great idea. I have troubled keeping chocolate in my pantry too. We are all midnight snackers.

Yum! See, I could have at least done powdered sugar! Your muffins look great Peggy. We liked these. I know there are lots of ways to spend free time out there, but there is something to be said for the hobby that gives you chocolate cake in the end!

I scrolled through your page and you have been busy. Wow, girl. BTW hope you weren't too disappointed with your TX size mundts. hehe New Word. I thought maybe you could just bake in the muffin cups and not have to acquire a pan. My cabinets are chucked full of pans these days and I can't believe I didn't have a min bundt. Honestly, I think they are a little homely. hehe
Oh well, some you win some you loose. Glad you jumped in.

These look very moist and delicious...an upside of not using the mini bundt. I know what you mean, I've been a CEiMB slacker...I just can't get my posts written!
i'm sure they were perfectly delicious!

Muffins... so good to know these will work too! Probably easier to get out than little molds - they look fantastic!

Sure, Peggy, remind me about yet another pan that I don't own. =P I don't have a mini bundt pan or a jumbo muffin pan! But I do have a couple of very cute 3-cup bundts that worked for this one. I actually liked this cake just fine without the glaze.
After my glaze didn't work, I wish I would have used powdered sugar on top too! Thanks for baking with me this week!
