TWD - Gingered Carrot Cookies


One of my favorite bloggers, and I consider her my friend as well, is our TWD host this week.  When I saw it was her turn, I knew she would pick something delicious and I knew I would want to bake it along with her.  Chandler was very excited about her choice too because he loves carrot cake and figured these would be very similar.  He was right!  They are like miniature little bundles of carrot cake in a cookie shape!  I always think twice about baking a carrot cake because they just seem like a lot of trouble to whip up.  But these were so easy I will definitely be rewarding Chandler with these often.  I halved the recipe since we are still reeling from chocolate turtle cake that I made last night. It is a good thing I did because I could eat the entire cookie sheet while they were still warm!  The only change I made to the recipe was I substituted pumpkin pie spice for the nutmeg and I put the entire egg in rather than trying to halve an egg.  Okay, can you halve an egg?  Just a click on the link above will take you to Natalia's blog where you will lots of creative baking with an Italian twist!
My firm sends us healthful tips on occasion and I thought this one worthy of sharing with you all.

The best way to remove a splinter is with an onion! Cut a small, postage-sized piece of fresh onion and place it on the padded part of an adhesive bandage. Then, wrap it around the splintered skin and keep covered all night. By morning, the onion will have drawn the splinter to the surface, making it easy to remove with a pair of tweezers.

I cut my recipe in half too..I can half an egg..just pour half of it in, that's what I did...it's messy but it works! Your cookies look so good!!

The cookies look great. I thought about halving the recipe, then just went ahead and made the whole thing. I plan to freeze a good portion of the cookies for future use.

I loved these cookies too! Great choice. I also halved the recipe. I just crack the egg in my scales, check the weight and pour in half!

I had the same thoughts about the egg situation. Guess I should have thrown in the whole egg because it looks like they turned out wonderfully.

Helpful tip--but can I remember it when I need it?? :-)

Look tasty. I made a whole recipe because of the egg. Good thing the hubs liked them. They are 80% gone.
I have never halved and egg before...I am sure it is worth trying though. :) Nice tip with the onion!

I also try to avoid making carrot cake but it's because it tries the limits of my self-control. I could stand and nibble all day.

Interesting tip about onions and splinters. I hate onions, so this would not be an option for me! ;)

Great looking cookies.

I LIVE by and LOVE my kitchen scale because I would then just measure an egg in grams and remove half that amount (after whisking the egg). I cannot live without my kitchen scale!

Who knew that about an onion, great tip. Now, back to the cookies, weren't they great? We really enjoyed them...twice as you know from Twitter...LOL. Yours look great and just ready for me on that little plate there!

Pleased you liked them. I halve an egg by just adding the yolk when I make cookies, but I think these cookied needed the whole egg for just half

I halved the recipe but used a whole egg too, since I figured a little extra egg wouldn't hurt. Yours look great! These were an unexpected cookie.
