CEiMB - Vanilla Spiced Oatmeal, or Risotto as a Substitute!

I'm allergic to oats.  I know that sounds weird, but last year when they tested me for shellfish allergy, the biggest thing that showed up was oats.  So I was told never to eat oats again.

I wanted to cook along with Mary this week and she chose an oatmeal dish, so I substituted risotto.  I was thinking the ingredients sounded a lot like rice pudding, so maybe it would work.

I would not advise anyone to make this with rice.  It was "okay," but not great.  I am sure the oatmeal was better.  Of course, I was not in a great mood tonight when I tried to eat it, so maybe that was the case too!  Let's just say it was a trying day at work.

Ellie's recipes are always so good and I enjoy making them.  They are healthy to boot.  We have a great group cooking together each week so if you want to try Ellie's recipes with us, come on over and join in!

At least you tried. I'm kind of surprised it didn't work witht the rice though. Maybe you needed to add more milk? Hmmm...interesting.

And...your photo does NOT look bad at all. In fact, you had me thinking of rice pudding and my mouth began watering when looking at the pic. Odd thing about rice pudding...I can't stand creamy stuff (like oats) but the way my mum made rice pudding was quite creamy and I loved it! Weird???

Sorry this didn't work out with rice. I don't even like oatmeal (which of course you know since you already visited my blog!) so this didn't work out here either. I still think yours looks pretty!

I haven't learned how to make risotto you are making it and spicing it up for breakfast!! Great job.

Yes I did enjoy the ham/egg tart. I will make it again. Probably add spinach along with the cheese.

That was a clever idea to try and sub in another ingredient...I would not have thought of that one. It looks good...maybe I would like it! We liked the oatmeal version. Sorry about your allergy...no oatmeal cookies ever? OH NO!!
