CEiMB - Wheat Berry Salad with Lemon Chicken

Posting a bit early on this one. 

Hostess this week:  Leslie of Lethally Delicious  This salad did not appeal to me at all, but Leslie is one of my favorite blogger friends and I wanted to cook with her this week.  Hop over to her blog on the link above and get the recipe there for this salad.

First of all, what ARE wheat berries?  I have never heard of or eaten any that I know of.  I looked for them at Publix, but did not find anything called wheat berries.  I thought a good substitution might be Bulgar Cracked Wheat.  I mean if I don't know what a wheat berry is, I could pretty much substitute anything I wanted to and call it a good substitution, right?  Actually, the photo of the wheat berry reminds me of Sugar Smacks cereal but I sort of figured that would not work.  This was a very easy to prepare and light dinner for us.  Funny, we liked it except for the Bulgar Wheat substitution.  I guess that will teach me!  Maybe it will be better tomorrow after it has chilled?  The chicken was delicious.

The wheat did not take long to cook - only 15 minutes.  I left the scallions out since Chandler is not a fan.  I added some onion flakes instead.

Wow that looks truly wonderful! So pretty, too. I don't know if I will get to this today or not...I wasn't going to do it at all actually and then decided that maybe I would, so I'm a little lacking in the effort department this week. You did a great job with it all.

It looks really good. I thought about the bulgur as well then opted for brown rice. It was SUPER! Guess I'd like to try the wheat berries.
I won't be posting my version until next week. It's been a bit crazy with the marathon, etc.

You know, I didn't think about wheat berries being hard to find but I know several of us had problems. Bulgar is a good sub (pearled barley - which might be hard to find too - would work well, too)> I'm glad you gave it a try and got a tasty dinner out of it. Thanks for cooking with me this week!

This is appetizers week in our Ina Garten Fridays group!!  I chose her deviled eggs because we love deviled eggs and I never deviate from my old family recipe so I thought I would branch out and try something different.  I'm so glad I did!  I love these and I am sure my DH will love them tonight for dinner also. TWD - Steph’s Bakewell Tart

What is a Bakewell Tart, you might ask.  Apparently it all began in Derbyshire, England.  I had no idea it was popular with  The Great British Baking Show.   This classic  combines a buttery shortcrust pastry with a filling of raspberry jam, (or in my case blackberry jam), topped with an almond spongecake and almond slices. I think there are probably many different versions of the Bakewell. On my first attempt, my crust totally fell apart in the oven.  At that point, I went to plan b and made four mini tarts.  These worked perfectly for us.  I have a very thin layer of the jam and wish I had used a bit more.  We enjoyed this and it was a breeze to put together.   Check out Tuesdayswithdorie.wordpress.com for others.

TWD - Brown Sugar Bundt Cake

It is my turn to host! Almost three years ago I had no idea what a food blog was, much less that there were ladies and gentlemen all across the world baking and writing about such things, and sharing and growing with each other over recipes.  I'm not a chef or a great baker, but I do love to cook for my family so I decided to join in.  Since we are just two days past Mother's Day, I want to thank my sweet mother (who passed away three years ago) for sharing her love of cooking with me.
