WWDH - Eggplant with Tomato, Basil and Parmesan Risotto

First, hello blog.  It has been a long time.  I've missed you.

This is my first Donna Hay recipe!   And, the first time I am writing my post from my Ipad.   So its a day of firsts all around.  To continue in that vein, it is also my first time to cook eggplant!  I'm not sure my ipad photo does this dish justice as it actually was a very pretty presentation of food.  The eggplant was cooked in a hot skillet and I may have had a bit of olive oil overkill with it.   I kept drizzling it on because I did not want the eggplant to dry out.   The risotto was a pretty easy dish to make.   Just took about twenty minutes to  "simmer down."   Some tomato puree mixed with good red wine and vegetable broth, then about 20 minutes of simmering.   Before serving you add some shredded parmesan and fresh chopped basil.  This recipe came from Donna Hays New Food Fast book.     I will say that it was a winner for my DH Chandler (darling husband).  It served us well for our "meatless Monday" with plenty left over for DH's lunch the next day.  The  Wednesdays with Donna Hay (WWDH) group can be checked out at http://www.wwdh.wordpress.com

Yes, indeed, hello blog it's been awhile! :-) It is such fun cooking with you again, I have missed the fun of that. This recipe was a hit for us as well (the risotto was a big hit with both of us whereas the eggplant wasn't quite the hit with Mark, but you can't please everyone all the time, right?). Your photo of it is really nice, it brings out the richness of it all. Served it with a pork tenderloin but I think you are spot on when you said it could serve for meatless anytime on its own. You sure did a lot of first this week! :-)

That is a lot of firsts. When I first joined Wednesdays with Donna Hay I thought that posting every week would be too much, but actually the recipes are so easy and delightfully good that I often manage it. (I am not the most consistent of the whole group, though. Some of the ladies never miss a week!) Welcome to our group.
