WWDH - Chicken Dukkalah with Couscous and Tahini Yogurt

I am really enjoying the Donna Hay recipes that I have made so far.  This week we made this chicken that was covered with Dukkalah.  I had no idea what that was, but after much googling, I decided to make my own rather than go looking for it in the grocery.  It was toasted seeds and nuts and a few spices.  Was not hard to make and it was quite tasty even on its own.  I overcooked my chicken a bit though so it was kind of dry.  I forgot to photograph the tahini yogurt that was supposed to be served with this.  The couscous was also easy to make and it was more flavorful than I had expected.

This was a good recipe...we enjoyed it as well. Fun to discover a new spice blend, and although I made a quarter of a batch, I will have some left to try out several more dishes...going to keep it on the counter in a little jar so I remember to do that! I did do the whole "remove the backbone" thing with the chicken, but this would work just fine with chicken pieces...or pork, or beef, or fish...a nice blend of nuts and seeds. Loved the couscous with it as well, yours looks good...sometimes I forget to check on the chicken as well and it gets away from me...it happens. :-)

Sometimes, it is much easier to make our own spice blends. Searching the stores is a wasted time taker.

I do want to try this on fish.

I have already used my homemade dukkah in several ways. It makes good salad dressing. I also made chicken pieces, but I imagine a whole chicken would be less likely to dry out, thanks to the skin.

Oh, now I feel better! I overcooked my chicken too. The temp was high, and it just needed a few more minutes...but not as many as I gave it. Tasty nonetheless! Yours looks marvelous!

It was exciting to make a new spice mix. And we can use for other dishes at that. Good looking chicken.
