Eating with Ellie -march to your own drummer

Well I am a day late with my post.  As usual.  Kayte chose March to your own Drummer as our theme this week.  That gave us a world of recipes to choose from.   I wanted a little something light and different for our dinner tonight.  We have been traveling and eating big time for the last week.  So I chose Ellie's Creamy Curried Egg Salad Sandwiches.  I guess I could have cleaned this up a bit for the photo!  Lol. First, if you do not have a rapid egg cooker, you need to run, not walk, to Amazon and order yourself one.  I have two.  One at home and one in my camper.  They only cost about $12.00 or so.  They steam eggs.  You can have six boiled eggs in about seven minutes and they are perfect every time and easy to peel.  No green in the yolks, just beautiful golden.



This was easy to mix up.  I would give Ellie's recipe a thumbs up.   Egg salad with a kick to it.

We have been camping this week down at St. George's Island.  It was good to get away.  It was spring break somewhere though and the beach was swarming with young people.  There was nothing much to do there and we had some rain, so we played a lot of cards and dominoes, and watched four movies.  We saw the Accountant, the Girl on a Train, Hacksaw Ridge, and Arrivals.  They were all pretty good, but I guess my favorite out of those four was Hacksaw Ridge.  I love a book or movie with a hero.  Arrivals with amy adams will put your brain in gear to figure it out.  Deep.

I love curried eggs so I am sure I'd like these sandwiches. Sounds like you had a fun vacation.

This is appetizers week in our Ina Garten Fridays group!!  I chose her deviled eggs because we love deviled eggs and I never deviate from my old family recipe so I thought I would branch out and try something different.  I'm so glad I did!  I love these and I am sure my DH will love them tonight for dinner also. TWD - Steph’s Bakewell Tart

What is a Bakewell Tart, you might ask.  Apparently it all began in Derbyshire, England.  I had no idea it was popular with  The Great British Baking Show.   This classic  combines a buttery shortcrust pastry with a filling of raspberry jam, (or in my case blackberry jam), topped with an almond spongecake and almond slices. I think there are probably many different versions of the Bakewell. On my first attempt, my crust totally fell apart in the oven.  At that point, I went to plan b and made four mini tarts.  These worked perfectly for us.  I have a very thin layer of the jam and wish I had used a bit more.  We enjoyed this and it was a breeze to put together.   Check out Tuesdayswithdorie.wordpress.com for others.

TWD - Brown Sugar Bundt Cake

It is my turn to host! Almost three years ago I had no idea what a food blog was, much less that there were ladies and gentlemen all across the world baking and writing about such things, and sharing and growing with each other over recipes.  I'm not a chef or a great baker, but I do love to cook for my family so I decided to join in.  Since we are just two days past Mother's Day, I want to thank my sweet mother (who passed away three years ago) for sharing her love of cooking with me.
