GFGF - Green Beans


This week in our Good Friends Good Food group we are focusing on green beans.  I searched many recipes and had my eye on a casserole, but then I decided to make salad.  I love salads that are chocked full of “stuff.”  So, I started with green beans and then added this and that.  Then more this and that.  I was extremely happy with the end result and cannot wait to eat the leftovers!  I have named this recipe “Not Your Granny’s Green Bean Salad.”

My DH does not care for green beans.  He will eat them, but it is not his favorite.  After we ate and sat down to watch tv, unprompted he said this to me.  “Now you know I do not love green beans.  But....these were possibly the best green beans I have ever eaten.”   After my shock wore off, I realized a compliment from him for me was the greatest.  

We had grilled steaks with this and it was a delicious meal!  Truly, I think I could have eaten a large bowl of this for my entire meal.  Can you tell I liked it?  Would make a beautiful side dish for the upcoming holidays.

Not Your Granny’s Green Bean Salad

Ingredients:

One bag prewashed green beans

1/2 cup Cherry tomatoes

1/2 cup Sliced mushrooms

1/2 cup golden nugget canned corn

1/2 cup Craisens

Crispy onions

Almonds

Dressing:

1/4 cup light olive oil

2T. Balsamic vinegar

1T. Lemon juice

1/2 tsp. Lemon pepper seasoning

1/2 tsp. Garlic powder

1 tsp. Spicy brown mustard

Salt and pepper

Instructions:  I used my instant pot to cook the green beans.  I added a cup of water and cooked them for three minutes and then a quick release.  I immediately put them in a cold water bath to stop the cooking process.  Dry a bit with a paper towel.  Then add the other ingredients, mix up the dressing and mix with the vegetables.  I added the crispy onions and almonds on top.  Enjoy!

Will definitely have to try these. If you can get a husband to highly praise something he generally dislikes, it’s got to be a winner!

Oooohhh...that looks so good and so pretty! If Chan likes it, I'm sure it will be a big hit here as we love green beans. All you doing all this Instapot cooking...I think I'm too old to learn new tricks like that...but it gets me thinking. I like recipes where I just add things in that I have on hand...all your ingredients are winners here.
