EWe-Pasta with spinach, garlic, and grape tomatoes

It was my pick this week in our Eating with Ellie group.   I chose this pasta dish because it looked tasty and would serve well for a night when we wanted to go meatless.  Or, it would be a great side dish for almost any entree.  I am extremely pleased with this dish.   It is healthy, easy to prepare, and delicious! Not to mention it is a pretty enough dish to serve guests.  It is definitely going to be on our menu rotation!

 It is made with penne pasta, garlic, spinach, grape tomatoes and topped with grated parmesan.

This was a great recipe pick, Peggy. We really liked it a lot. I was surprised that it had no sauce but the ingredients sort of weeped a sauce so that in the end the pasta had a little coating of a tiny bit of oil, tomato juice, a teeny tiny bit of spinach juice, and it all worked so nicely. Toasted garlic chips are my new favorite thing. :-) Your photo looks really wonderful.

Great choice Peggy! I can hardly wait for Summer tomatoes to do this again! This is the kind of recipe I'll do over and over through the hot months!!
