DC - Chocolate Chip Cookies

These are called "My Newest Chocolate Chip Cookies" in Dorie Greenspan's Dorie's Cookies book.   Other than a bit of a nutmeg and coriander the recipe is very similar to a regular chocolate chip cookies. I have never been a huge fan of chocolate chip cookies.  Which is very strange because I love chocolate!   For a cookie to be great in my opinion it has to be chock-full of things like nuts, fruit, etc.  i'm really a pie kind of girl.  Even as a child I would choose pies over cakes for sure!  The only cookies I remember my mother making when I was a child are her famous tea cakes with homemade chocolate sauce and chocolate oatmeal boiled cookies. Do any of you remember those?  Sometimes we would add a tablespoon of peanut butter to them.  They were very yummy!  I'm allergic to oatmeal now so those days are gone. Anyway these are delicious cookies and very easy to make.  I used a small melon baller to scoop out the dough.  My cookies turned out large

DC - Blueberry Buttermilk Bars

I attempted to make Dorie's buttermilk blueberry bars.  I tried to half the recipe.  In this case, that did not work as well as I hoped.  Also, When I took my crust from the oven it  had some almost black areas on it like it had burned even though I removed it five minutes earlier than the recipe called for.  They were just random areas.  Anyway the cookies tasted delicious and that's what's important!  I would definitely make this again. I cannot stop eating these cookies!  They are that good! Next time I will make the full recipe. Check on our website to see how others fared.    Dorie

EWE - Garden Party

I chose  this weeks theme as garden party.  It's that time of year when vegetables are so appealing to everyone!  I was serving hamburgers tonight and trying to find some vegetable that would go with them. I chose ellie's pasta salad with garden vegetables which can be found on page 250 of her comfort food fix cookbook.  It calls for twisted rotini but I used shells instead because that is what I had in the pantry!  This is very healthy pasta loaded with chopped vegetables. Carrots onion celery tomatoes cabbage.  All delicious!  And I would definitely take this to a garden party !   Recipe is here  Recipe . Ewe-cinco de mayo

This week's name was chosen by me.  It is always fun to make a Mexican dish.   Interesting fact. I have heard that only Americans celebrate this holiday. Ellie did not have a lot of Mexican dishes to choose from.  I chose the easy chicken mushroom quesadillas.  I like quesadillas!  I already had some shredded chicken which I had made in my instant pot the day before so these were easy to put together.  I have never made quesadillas before. I don't know if I cooked my tortillas long enough.   They were not really crispy.  And I have to say the filling was rather bland   I want to try this again soon but add something to give a little more flavor.  The salsa was good with it. DC -chocolate Cornflake Haystacks

Dorie Greenspan's cookies are the best.  Truly.  I am enjoying being in the Tuesday cookie group.  We make cookies every first and third Tuesday.  Come join us! Recently we were on a trip to Lagrange Georgia. At a restaurant there on their dessert bar, they had peanut butter cornflake cookies.  The next day we were in a grocery store and they sold peanut butter cornflake cookies so of course I had to buy a few for our trip home.  I liked them so much when we got home I googled and found a recipe for them!  These chocolate cornflake cookies of Dorie's remind me a lot of them in the way they look.   However, the similarity stops there. I was worried that these were not going to hold together when I put them on the cookie sheet. However they came out OK.  I just ate one while it was warm and while it was good, there was something lacking. Ewe -mash ups.

This week Gaye chose mash ups as our theme.  Being basically non-creative this week, I decided to make........you know it.........drumroll..........Garlic Mashed Potatoes!  I wanted to try cooking the potatoes in my new Instant Pot! If you have not discovered the instant pot yet let me encourage you to do so!  I am leaving mine on my countertop and using it every night.  It has replaced my crockpot for sure.   It can serve as a crockpot or a rice cooker or a pressure cooker. I made chicken teriyaki in just 25 minutes with frozen chicken breasts! OK back to the mashed potatoes!  They were delicious and I served them alongside meatloaf.  You can never go wrong with mashed potatoes.  Ellie does keep the skins on her potatoes which is fine by me.    By the way I cooked the meatloaf in my new Insta pot!   Can you tell I'm loving it? CD- Lemon Sugar Cookies

Lemon Sugar Cookies!  What could be better than that.  These were so easy to mix up a child could make them. Quick to cook.  Quick to cool.  And quick to disappear once you start eating them!   They are lemony, sugary, Crisp and chewy.   We are headed out this weekend for a camping trip to Callaway Gardens. They will be perfect to tagalong with us.  I made half the recipe and it made 24 cookies. Perfect for the two of us! EWE- Spring Harvest

I chose the theme this week as Spring Harvest.  My DH has now informed me that harvest only occurs in the fall.  That statement sent me to the dictionary for the true definition of harvest.  It is a gathering of the crops.  I told him spring has bountiful crops in my opinion!  One just has to visit a farmers market to see corn, okra, beans, tomatoes, etc. in abundance! I wanted to choose a recipe that incorporated a lot of spring vegetables.  But then I really wanted a salad.  I looked at ellie's salad recipes and she had one for a Cobb salad.   I added and subtracted from her recipe.  I omitted the hard boiled eggs and ham.  I added cucumber and mushrooms.  What sets this apart from other cobb salads?  The dressing!   You can find the recipe  Here Nice....lemony! EWE - Sweetypie -one pan chocolate cake!

Well Gaye chose "  Sweetypie"for our theme this week.  I, for some reason , did not notice the "pie" part and I made a cake.  In my head I just thought it was a sweet week!   Sorry Gaye!  I made Ellie Kriegers One Pan Chocolate Cake.  It sounded so interesting to me.  It contains no eggs or milk.  And you mix it up in the same pan you bake it in.  What could be easier than that?  And the best part is....it is chocolate!  And it is delicious!  You mix up the dry ingredients in the pan. Then you make a well in the center and pour in the oil and the Vanilla flavoring.   Then you  pour a mixture of cold water and apple cider vinegar over the dry ingredients and mix together. To make the batter.  Just bake and voila. Delicious chocolate cake! It has been such beautiful weather here lately other than a few thunderstorms.  I love that spring is coming!  I hope you all are having good weather too!  My camper seems to be calling out to me....take me somewhere and soon

Eating with Ellie -Lunch!

This week Margaret chose our theme to be lunch.... Soup salad or sandwich!   Since I made egg salad sandwiches last week I decided to make soup this time.  I think I have made this before, but it was so good it was worth repeating,  i made  Pasta fagioli with zucchini.  I did make one change to the recipe. Hamburger.  I just wanted some meat in there!  This soup is so easy to make even a beginner could prepare it.  I made some little cornbread muffins to go with it.   I have to say, we love love love this soup.  My DH said it was the best soup he has had in a while! Eating with Ellie -march to your own drummer

Well I am a day late with my post.  As usual.  Kayte chose March to your own Drummer as our theme this week.  That gave us a world of recipes to choose from.   I wanted a little something light and different for our dinner tonight.  We have been traveling and eating big time for the last week.  So I chose Ellie's Creamy Curried Egg Salad Sandwiches.  I guess I could have cleaned this up a bit for the photo!  Lol. The recipe can be found in Comfort Food Fix. First, if you do not have a rapid egg cooker, you need to run, not walk, to Amazon and order yourself one.  I have two.  One at home and one in my camper.  They only cost about $12.00 or so.  They steam eggs.  You can have six boiled eggs in about seven minutes and they are perfect every time and easy to peel.  No green in the yolks, just beautiful golden. DC -corked breton galette

It is cookie day...a day late for me.  We make cookies every other Tuesday.   This week’s cookie is a “corked” Breton Galette.   I did not have a cork so I used the end of a cheese spreader. However my "cookies" came out more like mini cakes. I guess I cut them too thick?  Or they rose to high?   So they are not perfect. I filled one with Nutella just to try it.   The rest I filled with blueberry preserves.  Let me tell you this is delicious.  These cookies are so buttery and delicious.  Almost like a pound cake taste.  Which I love love.    But WHAT did I do wrong?  I need to know! I'm so glad I made these. But I want to try them again and see if I can get them to look more like cookies! EwE - Italian Night

Italian night is our theme this week!  So many delicious recipes that I could've chosen!  I chose Ellie's chicken zucchini Alfredo.   So glad I did!  It was easy to make and I had all of the ingredients in my pantry!  We both really enjoyed this dish.   You sauté some zucchini, then pan sear some chicken, boil the fettuccine, then make a sauce from milk, flour and Parmesan cheese.  I have never made Homemade Alfredo sauce but I will be making it again!  So delicious! Ewe-Stuff It!

This week it was my choice of a theme for our Ellie krieger group. I chose as our theme "stuff it."  Of course that left me with the task of finding something to stuff.  There's always potatoes or mushrooms or turkeys or chickens.  I found Ellies stuffed turkey burgers and decided to go with that.  They are delicious. I did have to leave out the roasted red peppers though because my husband will not eat them.  Although you cannot see it in the picture there is mozzarella cheese stuffed inside.   It makes for a very moist burger. Ewe - Mexican Madness

i am a few days late posting for the Ellie Krieger group.  Gaye chose mexican madness for our theme this week.   After looking through Ellie's recipes, I knew I wanted to try the breakfast burrito.  The week got pretty hectic and I never got around to making them for breakfast.  So here we are....Sunday afternoon....watching the super bowl and enjoying our breakfast burritos!  I know it is not typical Super Bowl food.   But I have to say these burritos are delicious.  Photo does not do them justice.  They are filled with scrambled eggs and cheese, tomatoes, avocado, black beans, rotel and sour cream.   Who wouldnt love that?   We accompanied them with tostitoes and I made salted caramel brownies for dessert. EwE - Soup's On!

This week in our Eating with Ellie group we are making soup!  Soup is one of my favorite things to prepare.  I chose Ellies fall vegetable soup.  While I know it is not fall, it certainly feels like it here in Alabama this week!  So it seemed like a good fit for the weather!  We have had some beautiful weather lately.   I changed a few ingredients. I do not care for chickpeas so I just added some diced mixed vegetables.  I did also add diced butternut squash which the recipe called for. It smells so good cooking!  I used spinach instead of kale. EwE - Barnyard Fun!

This week in our Ellie krieger group it was my turn to choose the theme!  I chose barnyard fun. So you could make anything that came out of a barnyard!  I chose Ellies herbed pork tenderloin.    Pretty simple to make.  You make a mix of the dry spices and rubs on to the tenderloin.  Then you sear it in a skillet for 10 minutes.   Then finish cooking in the oven on 450.  I made some ranch potatoes to go with it.  Served up along side i made my new favorite dish of zucchini, tomatoes and kalamata olives.   Just fry that up together in a bit of olive oil until zucchini is tender.   This was a great meal. I love all of Ellies cookbooks that I own. Cookies with Dorie - World Peace!

It seems very fitting in these times of unrest and division our nation is experiencing right now to make Dorie's World Peace cookies.  These are simple to make and simply delicious.  I made this once before when we were in the Tuesday with Dorie group.  I had forgotten how good they really are! Some friends were having us over to learn to play a card game called "hand and foot."  I was to bring a sweet.  So I killed two birds with one stone and took these World Peace cookies.  They were a big hit and we absolutely LOVED the hand and foot card game!  I am sure we will be playing it lots in the upcoming months. My darling husband got me the Cookies with Dorie cookbook for Christmas.  I am looking forward to making every single cookie in that book! The cookie ingredients included flour, brown sugar, cocoa, butter, vanilla flavoring, sea salt and regular sugar.  You just mix up and then roll the dough into a log and freeze for a few hours.  Then slice and bake f
