Ewe - it's beginning to look a lot like Christmas!

I am running a couple of days behind!  I would be willing to bet some of you are as well?  After all tis the season!  Kayte chose as our theme this week to do foods regarding Christmas. There are so many choices out there. I decided to think outside the box and make a little healthy breakfast dessert. You could eat it at anytime of the day. But we chose to add it to our Christmas Eve breakfast as a special treat. It is extremely easy to whip up. It is vanilla yogurt, frozen raspberries, whipped cream and confectioner sugar.  I did not add the confectioners sugar but instead added a teaspoon of peach schnapps just to seem a little more festive!  The name of the dessert is raspberries fool.  Not sure why Ellen Krieger called it that but it is delicious.  We thoroughly enjoyed our little treat and the added sugar was not needed.  You can find the recipe online. TWD...Christmas Spiced Cookies

This is my second of the two choices for cookies this month.  The first was pfefferneusse and this one are spiced Christmas cookies.  They are basic  Dorie's Good for Almost Anything Vanilla Sugar Cookie dough mixed with Christmas spices, cut into shapes, sprinkled with sugar and baked.  Instead of adding more sugar sprinkling on top, I sprinkled a few of mine with extra cinnamon.  These cookies are tasty and easy to make!   Who could not like a good spicy cookie!   Happy holidays to all! EWE - nuts and Such

I chose our theme this week and it is nuts and such for our Ellie Krieger group.  I know with that title you were probably expecting NUTS or such.  You are getting the such, with nuts on top!  I was planning to make Ellie's spiced nuts,  but then I saw this Sweet Potato  casserole and decided to go with that.  It is, after all, topped with pecans!  Since there are only two of us here, I decided to just put it into two little ramekins to bake instead of doing an entire 9 x 13 casserole.  It worked great for us!   We love love love sweet potatoes!  I'm so thankful I have a husband who will eat almost anything that I cook.  The exceptions are onions and bell peppers, and turnip greens.   I even have him eating grits now! EWE - When life gives you lemons...

Gaye chose our theme this week for our Ellie Krieger group.  When Life Gives You Lemons.  I am a huge huge fan of lemons.  Love the lemon in my tea.  My dh does not like lemon in his so he always gives me his slice.   There were so many different ways I could have gone with this theme.  I chose Ellie's 25 minute lemon orzo  pilaf.   This was so easy to make and I do not believe it took even 25 minutes! TWD-Dories's Pfefferneusse cookies

#cookiesandkindness #cookieswithkindness For  Tuesdays with Dorie, Dorie's Cookies.   Can you pronounce pfefferneusse?  I would say the proper way is feffer nussa.  If you disagree, please tell me!  The name means pepper nut and both are ingredients in this delicious cookie, along with several other flavorful spices.  I used lemon zest in mine.  My kitchen smells so good!   I love baking things that fill the house with spicey goodness.  I only cooked these eighteen minutes instead of the 20-22 indicated.  And they are plenty done.  These are the perfect cookie to eat while you have an afternoon cup of tea or coffee.  Just slightly sweet and nicely flavored.  Love them! EwE - parmesan crusted chicken breast

This week Kayte chose "Fowl Weather" as our theme.  Love this theme!   I chose Ellie's parmesan crusted chicken breast.   I used chicken tenders instead of breasts.  This was so quick and easy, plus very tasty.  The mustard base really brings our flavor and the toasted parmesan a nice crunch.  Lived it! TWD- Chocolate Sandwich Cookies

I am a couple of days late on this post.  I'm not proud of it.  But I am proud that I made these cookies!     This month the participants chose two recipes to post.  I chose to make the  Peanut Butter Change-Ups  first.  This week I made these Chocolate Sandwich Cookies . I found these to be very easy to mix up.  At first I thought the dry ingredients would never get blended in...but then suddenly it was a dough!  Rolling it between two pieces of parchment was easy and cleanup a snap.  I wasn't sure I rolled them quite thin enough.   Mistake number two was not waiting until the cookies were cool enough and my filling melted a bit.  I consider myself a novice when it comes to baking so they are not perfect.  But they are delicious and I will definitely have these on my repeat list!  Especially with the holidays coming up!  I was wondering how they might taste with a peppermint filling!   Since there are only two of us here, I only made half the recipe.  It was perfect as

In my cooking with Ellie Krieger group, I chose chili for our challenge this week.  With fall here (even though our weather is hot enough to fry an egg on the sidewalk), my menu demands a pot of chili at least weekly.  I like to try different variations and Ellie's did not disappoint.  I especially liked the addition of carrots to this traditional dish.   We enjoyed this on Halloween night as is our tradition, along with a scary movie.  We watched Stonehurst Asylum.  It kept our interest and had a huge twist at the end that I had not figured out! Gaye chose "perfect pasta" for our theme this week.  Italian food is not always my favorite (though it is for my DH), but I am all about some good spaghetti.   I found this recipe online  Here Just a little background on Ellie Krieger.   Ellie is a dietitian and host of the food networks "healthy eating."  She has a masters degree from Columbia University.  She knows all about making food healthy yet maintaining flavor and aroma.   What do we know about puttanesca sauce?   I did a little research and it literally means "in the style of the whore."  Legend says the ladies of the evening would cook this pasta while entertaining their gentlemen callers.   I can assure you the only gentleman caller I will serve this to is my Dh who could eat pasta every day of the week! TWD-Peanut Butter Change-Ups

Well hello old friend!  It has been quite a while since I posted anything for the Tuesdays with Dorie group!  I am a big big fan of Dorie Greenspan!  Dorie has a new book out called Dorie's Cookies which was just released last month.   The group posts for this will be the first and third Tuesdays of the month and can be linked at the main   Tuesdays with Dorie   website here .   These peanut butter cookies have just your basic ingredients in them with the addition of nutmeg.  I usually try to bake a little snack to take to our dance club on Friday nights, so this week I will be taking these delicious cookies.  They were supposed to have a sprinkling of sugar on top but I ran out of sugar while making them.  I mean who runs out of sugar right?  Meeeeee You can check out what the other bakers did at this website   Dorie The recipe can be found online  Here

EwE. -Jewel Roasted Vegetables

This week in our cooking with Ellie group Margaret chose vegetables as our theme!  Vegetables are not only so good for us they are also very tasty.  I looked at all of Ellie's recipes and I decided to make the roasted jewel vegetables.   Other than a bit of chopping they are easy to make.   We love fresh beets but they are very staining to your hands when you are chopping.  The red will wash off though thank goodness.  And they are so good they are worth a little extra effort to cut up.   I found this recipe on the Internet so I am posting it here.  Enjoy! EwE- Spicey Chicken Fried Rice With Peanuts

Spicey Chicken Fried Rice With Peanuts! My very favorite rice is the sticky white rice like you find a Chinese restaurant.   What is your favorite rice? Today for lunch I made this wonderful spicy chicken rice from an  Ellie Kreiger recipe.   It was so delicious I could've eaten the whole bowl but I decided to save some for my husband!  It is chicken mixed with brown rice, Bellpepper, onions and scallions, soy sauce, brown sugar, ginger, garlic, water chestnuts, peanuts.   It was exactly what I needed today!   It literally takes minutes to prepare this dish. eWe - Soup and Salad

This week in our cooking with Ellie group my friend Kayte chose the theme of soup and salad.  After browsing Ellie's soup recipes I decided to try the Tuscan vegetable soup.  With the first hint of fall in the air, I am all about making soups!   However since it is still 90° here in the south, I am sort of having to pretend it's fall for now!  Fall is definitely my favorite time of the year.  I love the colors of the leaves and I love pumpkin spice latte at Starbucks and I love almost anything pumpkin.  And of course with fall comes Halloween!  Fun! In our group we generally do not post the recipes that we make as a courtesy to the author of the book. However I found this one online so I am happy to share with you.   I made it exactly like the recipe with one exception.  I added a little shredded chicken.  This is one of the tastiest soups I believe that I have made.  Loved it!  Will definitely make this over and over again.  I think part of what made it so tasty was the z

EwE - pesto potatoes

The theme  this week in my Ellie group was Savvy Salads.  Instead of a green salad or a fruit salad I chose to make this potato salad.  If you follow my blog you know that we are potato lovers at this house!   I made hamburger sliders to go along with these.  Potato salad can be a really nice complement to a hamburger occasionally instead of chips or fries the traditional sides! We just got back from traveling to Waco Texas where we checked out Chip and Joanna's Magnolia Place.  It was fun to actually be there, but the prices are a little high!  Anyway after I travel it takes me a couple days to get back in the mood to cook.  Are you like that too? EwE Guiltless Potatoes Au Gratin

This week in my Ellie Kreiger group the theme was "one potato two potato."   We are big potato fans at this house so it was right up my alley. I checked online and found these scalloped potatoes. Ellie always tries to make everything a little bit healthier so I enjoy her recipes and feel better about eating this delicious food!  This was a simple recipe.  You simply cook the potatoes in boiling water. While you're cooking those you make a paste of flour and milk and garlic. I got my paste a little thick but it was fine anyway.   And of course cheese makes everything better!   So this recipe is a win-win. eWe -its not easy being green

Well here it is Thursday again!  This week in our eating with Ellie group the theme was "it's not easy being green."   I think that saying was made famous by Kermit the frog.  After looking through the vegetables in Ellies Comfort Food Fix cookbook, I decided to make the Broccoli and Cheddar stuffed potato skins with the Avocado Cream on top.  Basically these were made like regular stuffed potatoes.  You bake the potatoes, then cut in half lengthwise, and then scoop out the inside of the potato.  You fill that with cooked broccoli and cheese.   The avocado cream was basically like a homemade guacamole.  It called for scallions and I did not have those.  My DH really enjoyed these and was excited that one was left over for his lunch! EWE - vegetables!

Okay okay!   It has been months since I posted on here.  I will tell you a secret.  It has been SO long I almost never got into my blog.  I had forgotten not only my password, but also my login!  It is very frustrating to me that these websites we frequent tell you that your password has to be a certain length, and include numbers and characters, etc.   After all, it is MY computer and it seems like it should be my choice to choose whatever password I like.  Anyway, I managed to get in eventually as you can see! Now this week in the Ellie Krieger group, the theme is vegetables.  You do not have to ask me twice to cook or eat a vegetable.  Love them.   I met a man on saturday, however, that eats no vegetables.  Only potatoes and mac and cheese! I had a serious talk with him, but there was no changing his mind. I made Ellie's parmesan zucchini rounds.  I found the recipe online here .  I think they were supposed to be crisp, but mine were soft.  They were still delicious.

EwE - Waldorf Chicken Wraps

EwE - Mushroom Sloppy Joes

We LOVE sloppy joes!   But these are so much better than those you make with a canned sauce.  And they are easy to prepare and quick.  Not to mention they only have good ingredients in them and not all the chemicals and preservatives the canned ones have.   You can access Ellie's recipe in her Weeknight Wonders book Or, this is how I made them.  We wanted some meat in ours so I added ground turkey.  So good I can hardly wait to eat the leftoverss tonight! Brown one lb of ground turkey.  Add one onion chopped and one bell pepper chopped.  Cook these for a few minutes until soft before adding to turkey.  Add two cloves of garlic, one T. Apple cider vinegar, one T. Chili powder, two T. Sugar, one can drained pinto beans, one cup chopped mushrooms, one 15 oz. tomato sauce, one T. Tomato paste.   Simmer for fifteen minutes,  enjoy!
