WWDH - Hot Potato Mustard Sauce

In our Donna Hay group Kayte  chose these hot mustard potatoes.  I am usually not a big fan of mustard but these were easy and delicious!  I used the red potatoes (as you can see).   I followed the recipe with the exception of red onion.  That is where i draw the line.   No one here eats red onion!  These wereso simple to prepare.   You just cook your potatoes.  Mix together mustard, olive oil, white wine vinegar, parsley and red onion.   They sort of reminded us of a hot German potato salad taste.   Join our group!  No commitments.   Cook when you can.    Click here

EwE - Asparagus and mozzarella pizza

This was my pick this week for our Eating with Ellie group.  I just finished eating it for my lunch and I loved it!  Today is my first day after ending my radiation treatments and I am so excited to have my life back!  It was fun to actually go to the grocery store and purchase what I needed for this pizza.  Ellie did it again as this was simple to make and delicious.  The ingredients are just pizza crust, mozzarella, asparagus, parmesan and some fresh basil on top.  I might have needed a few more asparagus spears on there.  As I was eating it, I kept thinking some red pepper flakes cooked in it might have been good as well.  But it was delicious just this way!  I also made a second pizza for my lunch for tomorrow and added some tomatoes to it.  If you want to see what the others in the group did with this recipes, check out this link.  ewellis.wordpress.com

Break!

I'm taking a short break in my blogging and cooking!   Just a couple of weeks so watch out I'll be back!   I'm going to radiation treatments right now and there are some days where I'm pretty tired.  So right now I'm taking care of me and cooking is put on hold!   I am anxious to get back to it however!  So hope you have a nice week and wonderful weather and I hope to be back next week or the next with some delicious recipes!   Blessings on all of you.

Asian Chicken and Vegetables in Foil -EwE

Margaret chose this simple but delicious chicken for us in our Eating with Ellie group.  Because  it is cooked in the foil packet it is really moist.   We are not huge lovers of green pepper so I left that one out.  I think this would be good with some added vegetables like broccoli or even sliced potatoes.  It did take about 45 minutes to prepare.   It is chicken with green onions, red and green peppers, sauce, and toasted sesame seeds to serve. come cook with us on Thursdays!   Healthy, delicious meals. ewellie.wordpress.com

WWDH - Green Olive Baked Chicken

EwE - Tuscan Kale Salad

We have tried to love kale and we just do not.   Have tried it many different ways.  I wanted to try this recipe so I substituted some mixed greens for the kale.  It was delicious!  This was my first time to have pine nuts.  I liked them!   This salad is so easy to make and amazingly flavorful.  Just raisens, toasted pine nuts, greens, and a dressing made with olive oil, red wine vinegar.   Kayte chose this for us to try.  Check out our website at  ewellie.wordpress.com You can find the recipe here  http://www.elliekrieger.com/tuscan-kale-salad#.VS-kvtq9KK1

WWDH - Ricotta Herb Rigatoni

Rigatoni with fresh basil and ricotta cheese!    This dish was delicious and so easy to prepare!  We try to do at least one meatless meal each week and this was perfect.   My photo does not do it justice.   Margaret  chose this dish for us in our Wednesdays with Donna Hay group.   It is rigatoni pasta, ricotta, fresh basil and parsley, black olives, salt and cracked pepper.  Check out our website  Here Hope you all have a blessed Easter.   Maybe the bunny will hop your way and bring some fun surprises!
