TWD - Savory Corn and Pepper Muffins

This week's recipe on TWD (Savory Corn and Pepper Muffins) was chosen by Rebecca of Ezra Pound Cake, one of my favorite blogs to read! Head over her way and check out the recipe.

Let me just say, "you had me at muffin."
I'm a huge muffin fan and especially anything that looks like, tastes like, or feels like cornbread in my mouth gets an A-plus from me. I always say a muffin tastes so much better when a little batter spills here and there. Don't you say that too?
My DH did not care for them so much. That's because he is not a fan of red bell pepper and he said that is all he could taste in them. I am not sure how he missed the wonderful taste of the corn and the jalapeno and just the batter itself, but he baffles me sometimes.

These muffins completed me. They were delicious.

I have an aunt who hates red bellpepper and claims that the flavor overwhelms everything else around it. It's tricky when she's around because I love red bellpepper and add it to almost everything. Your muffins look delicious.

I wish I could eat Red Peppers, but they do not agree with me. I would leave those out of mine... BUT I love the color combo of the red, green and yellow.

Yes, I DO always say that thing about the batter, Peggy. And you know how we Yankees can be with cornbread. You'll have to cut your hubs some slack, he can't help it. I can tell from your pictures that your muffins were FABULOUS!!

I'm so glad you liked these! I can be iffy on bell pepper at times; we really liked the canned green chiles in these muffins, so maybe hubby would agree?
Muffins of all kinds are big favorites at our house too!

Yours turned out great! I missed the gene that allows one to get muffins out of a tin without mangling them... thus the papers.

I wonder if DH would like the flavor of roasted red peppers. I think that might add another layer of flavor to the muffin come to think of it!
By the way, I'm not sure if I ever told you how much I love your Dr. Seuss quote. I'm going to share it with my fourth graders. Kids are notorious at hiding who they really are so they can fit in. Thanks for the inspiration!

TWD - Crunchy Toffee Bars

Every time I bake with toffee chips, I think of Heath Ledger. You get it, right, Heath Toffee / Heath Ledger. I know I'm weird. But in honor of the Oscars this week, I thought a photo of Heath was appropriate. He was a great actor with a brilliant future ahead of him. Sad. Of course, my real photo choice of the week was going to be my personal favorite Hugh Jackman. Since he was the host of the Oscars, I think it only fitting that we post a photo of him, as well, right? After all, he IS the sexiest man alive. Lenox Almond Biscotti

This week Gretchen of Canela & Comino chose Lenox Almond Biscotti for our recipe challenge. Oh Gretchen, thank you thank you, thank you! Biscotti has always been one of my favorite foods (especially around the holidays). Who knew someone of so little culinary experience could actually bake biscotti in their own kitchen? And the greatest thing of all was this was actually one of the easiest things I have baked AND I had all the ingredients I needed right in that pantry of mine. Or so I thought . . . My new shiny red KA mixer was gently purring like a kitten as it mixed my wonderful dough when I discovered - oops, completely out of almond flavoring.
