TWD - Richard Katz Brownies for Julia, My first attempt at baby mints, and some happy news!



One of my very favorite bloggers, Chocolate Chic over at chocolatechic.wordpress.com chose these brownies when she hosted our TWD group in early February. Illness prevented me from making them at that time, but I am posting now. I know if Ms. Chocolate Chic picked these, and they are Dorie's recipe, they will be good!

You mixed them up in two bowls, something I have never done before. Of course, I did something wrong because mine did not rise as they should have. Or maybe because I halved the recipe my pan was too big. And I don't think I cooked them long enough. I am always scared I will overcook brownies and they will be hard, so instead I took them out of the oven too soon. They are very gooey. And very chocolatey. I'm not sure I will make this particular recipe again, but if you want to try them I'm sure Chocolate Chic has the recipe on her webpage.

Tomorrow I am helping with a friend's baby shower. I am supposed to bring mints so I decided to make them because my boss makes them all the time. It was my first attempt at making baby shower mints. They weren't hard to whip up, but time consuming popping each one into this little mold and getting just the right amount of dough in the mold. Plus, I think I went a little overboard on the mint extract. I didn't measure, I just poured it right in. I think they will be just what we need after eating lasagna, don't you? A "breath" of mint to soothe our palates. These are made with one 8 oz. cream cheese, 2 lbs. confectioner's sugar, 1/2 teas. peppermint extract, and a drop of red food coloring. Then you make little balls and roll them in granulated sugar and either press into a mold or just flatten with a fork tyne. Let them dry for an hour or so and pop into the freezer. Ready to serve the next day! We'll see how they go over with the masses tomorrow.  No, they are not perfect.



And now. . . drumroll. . . .I am finally allowed to tell that I am expecting my first grandbaby in August! Oh I know what you are thinking. I'm way too young to be a grandmother. Go ahead, compliment me. I love it. I can't wait to hold that precious gift from God in my arms. . ..just sayin.

I'm thinking chocolate and mints go together, don't they? Yes, definitely a young grandmother and congratulations to you and your family. So much fun ahead. Chocolate brownies are so fudgy. Made them twice and would like to try again. First time I under baked, shoved in the freezer, Mmmmm so good from the freezer icy cold. Go figure. Anyway, made them again and put chunks in home made chocolate ice cream for Corbin. He likes it.
So..... what is this new little person in your life going to call you when he/she learns to speak your name and melt you into a puddle? hehehe
