CEiMB - Southwestern Hash and Eggs

Melissa at Melissa's Kitchen chose our recipe challenge in the Craving Ellie group this week.  I love breakfast for dinner so I decided it would be something easy to prepare when I got home from work.  Instead of peeling and cutting potatoes, however, I cheated a little and used frozen hashbrowns.  The DH and I were very pleased with the taste of this dish, although it doesn't look very pretty in my photos! 

About a week ago, we came home from being out of town for the weekend and our power was off.  After careful detective work, we figured out it had been off over 24 hours and therefore I had to throw everything out of my refrigerator and freezer to be safe.  I did not throw my eggs out however because I was thinking eggs are not refrigerated when the chicken is sitting on them, right?  So I bought some new eggs and I was planning to use those, but somehow the old eggs and the new eggs got mixed up in my refrigerator.  My friends at work told me I needed to toss the old eggs because once they are refrigerated, they have to stay refrigerated.  Is this true?  At any rate, we I have a sinking feeling that we probably ate bad eggs tonight  so if you do not hear from me again. . .. . . ..well you know what I'm saying!

if it tasted OK then I wouldn't worry about it. Salmonella in eggs is incredibly rare; you are more concerned about the egg rotting and if that is the case you will taste it. hopefully it tasted good! i have way too much stuff in the fridge/freezer. if i had to toss everything in there i think i'd cry.

We enjoyed this recipe as well. So easy, so tasty and you just feel like you ingested all sorts of good nutrition after eating it.
Love it.

As for "bad eggs" not sure. Really question what kind of reaction would cause refrigerated eggs to spoil quicker once room temp as opposed to stored room temp eggs.
This was a surprisingly delicious meal. Hash is not an appealing word to me.

This is not like any hash, I have previously had. This is super good.

I love potatoes and they were the base of the recipes other than the beans. There seemed to be so many beans but they tasted just fine.

I see eggs out in stores while they wait to be put away. I don't know how long they have been there but we seem to be buying eggs that have sat out. I think it is fine.

I like the idea of hashbrowns. Would really make this a quick meal.
