TWD - Not Just for Thanksgiving Cranberry Shortbread

Host this week:  Jessica of Singleton in the Kitchen
Jessica is one of my favorite bloggers.  I was excited she chose this cranberry shortbread so I could try it out before the holiday arrives.  And it was worth the trying out!  We absolutely loved it.  And it was so easy to make.  The dough came together really well.  Next time I might add a tad bit more sugar to the cranberry mixture however.
Mine did not rise a whole lot.  I'm not sure how tall it is supposed to be.  It is about the size of a one layer cake.  I cannot wait to see how others turned out.  I plan to make this again this weekend to take to a friend's house for dinner. They are serving chicken pot pie so I think this will be perfect with it.

Going into the oven:
Coming out of the oven:

I can't wait to eat another piece tonight!!

Looks just fine to me. I plan on making it again soon, too.
Peggy, yours is the first Cranberry Shortbread Cake I've seen so far and it looks absolutely delicious! Beautiful job on it. I'm making mine tomorrow and am excited to give this recipe a try :)

It looks great...very seasonal, am looking forward to making this tomorrow...keep forgetting to get cranberries!
Peggy, beautiful 'crust'. The berries are gorgeous also.

It does taste fabulous. This is one of those happy cakes.

I even made my hubby one very plain cookie out of small piece and he liked it plain.

Looks wonderful to me! I baked in a square pan and shared them with the teachers. I think the shortbread would be so good with some blueberries and lemon in there! Hope all of your friends enjoy it, too.

It turned out great - I don't think it is supposed to rise much.

I love that last photo with the red band of cranberries around it. I think yours looks perfect! I used a runny raspberry filling, so wasn't able to fit much in, but it was still good.
:)
Looks delicious! I bet this would be good with chicken pot pie.

You're right....shortbread isn't a big "riser." It looks really delish. I cut a little piece, tasted and the rest is going with me tomorrow to work. I'm working part time now. Loved this recipe didn' you?
