CEiMB - Savory Chinese Chicken Salad

I was very excited about Danica's choice because I had contemplated making this salad several times but just never did.  Unfortunately, my salad is lacking a key ingredient.  Green cabbage.  It called for both red and green. I remember choosing a head of green cabbage at the store, but somehow it got lost on the way home.  I checked my trunk, everywhere and could not find my green head of cabbage.  I keep thinking one day I will look in my pantry and there will be a head of green cabbage in who knows what condition. 
If I made this again, I think I would just use romaine lettuce.  I'm not a huge fan of the raw cabbage.  We really enjoyed it for our lunch on Saturday.  One ingredient in it that I love is water chestnuts.  Love them!!  I also chopped my carrot instead of shredding it and it would have been prettier had I shredded.
I loved the salad dressing on this.  Very tangy with an Asian flair.

Peggy, I agree with you about using lettuce and I do like cabbage. For some reason, we did not care for it, in the salad. The dressing is great and I can see, making it again.

Mine was crowded with too much cabbage and I did not put in as much as the recipe called for. I could not get a good photo. It simply looked like a lot of mixed up stuff which it really is.

Both Ted and I really liked the raw cabbage. But it's one of my favorites. I like the peppery taste it has when it is raw.
The dressing made this salad.

I actually like the idea of trying this salad over romaine too. I am so glad you liked it ~ I definitely think it's one of the better Chinese Chicken Salads I've ever made.

I'm not a huge fan of raw cabbage either so I used mostly lettuce but added a bit of shredded cabbage and broccoli slaw to give it more of a crunch, and we loved it that way! Sometimes I find cabbage to be a little overpowering, but I was wondering if Napa cabbage is not quite so strong? Anyway, this looks beautiful with all that red cabbage in there! I hope the green cabbage is back at the grocery store in your cart or something because it is never pleasant to find things like that hidden in unusual spots! I drive an SUV and have had things roll out of the bag more than once and get lodged under the backseat. Ick!

Let's pretend I have your green cabbage and you have my red because I am going to make this and I can guarantee there isn't going to be any red in it...oops. Not a fan. Yours looks beautiful, however, a party in a dish!
