CEiMB - Tuscan Chicken

One of my favorite blogger friends, Margaret of Tea and Scones is hostess this week and she chose Ellie Krieger's Tuscan Chicken.  I'm hardly ever disappointed in Ellie's recipes, plus I always know I am eating healthy when I prepare one.

This is basically a chicken dish loaded with good vegetables - zucchini, tomatoes, fennel.  I love fennel - so licoricy.  Is that a word?

I'm not sure if licoricey is a word or not, but I am also a big fan of fennel. Unfortunately I couldn't find it this week at the store, and of course I was shopping the day I needed it lol I will try it with fennel next time, though I do think the leek was nice in it as well. Beautiful presentation, especially with those berries! YUM!
You showed this recipe off beautifully. It is as good as you make it look.

We loved it, too. I really like how you have the meat in small pieces. Matt got the chicken breasts at the store for me and they were so huge that 2 of them fed 3 people and 2 dogs...lol! I have enough for another meal! Great photos of it all.
