WWDH - Eggplant with Tomato, Basil and Parmesan Risotto
First, hello blog. It has been a long time. I've missed you.
This is my first Donna Hay recipe! And, the first time I am writing my post from my Ipad. So its a day of firsts all around. To continue in that vein, it is also my first time to cook eggplant! I'm not sure my ipad photo does this dish justice as it actually was a very pretty presentation of food. The eggplant was cooked in a hot skillet and I may have had a bit of olive oil overkill with it. I kept drizzling it on because I did not want the eggplant to dry out. The risotto was a pretty easy dish to make. Just took about twenty minutes to "simmer down." Some tomato puree mixed with good red wine and vegetable broth, then about 20 minutes of simmering. Before serving you add some shredded parmesan and fresh chopped basil. This recipe came from Donna Hays New Food Fast book. I will say that it was a winner for my DH Chandler (darling husband).
