Eating With Ellie - Chicken Paprikash

Kayte chose this dish from Ellie's Weeknite Wonders cookbook.  Our group enjoys cooking each week together and discovering new and healthy foods.  I was not sure we would like this particular dish, but boy was I wrong!  It will definitely be a repeat at our house.  And very easy to prepare.  I left out the bell pepper because that just is not a favorite for us.  Basically you just cut up some chicken thighs (I used breast instead) and saute the chicken with onions, bell pepper and garlic, then adding some paprika (I used smoked paprika, but a sweeter one would also work well), some chicken broth and sour cream.  It called for cayenne but I was out of that so I used a few squirts of Sirachi Sauce from my refrigerator.  Everything is better with Sirachi Sauce, right?  Then you serve it up over some egg noodles and you have a delicious dinner!  We added some brussels sprouts for a side dish to ours.  When my DH came home from work, the first words out of his mouth were "something smells delicious."   And he was right.

Oh, I just love it when the husband comes home from work and says something smells delicious...how very 50's of us, right? lol, but I do enjoy that feeling of having made something that someone can't wait to eat! Yours looks wonderful...and I have to say that I will try the smoked paprika as well as that sounds wonderful. Chicken breasts work nicely, I bet, I just was delighted to find a recipe with chicken thighs as Mark likes those so much, it's nice to get some recipes that actually call for those! A good week...this was a hit at our place and we will be making it again as well.

Peggy, I had never heard of this dish before, but I loved it. Kind of like chicken strog.

It does look delicious, Peggy. Mine was rather thin. I think I need some better paprika.
