Mimi's Tomato Salad with Shallots and Parsley

This is my second post for the new group I am in called Weekend in a French Kitchen.  This recipe comes from the second book we are using which is Mimi Thorisson’s book A Kitchen in France.   I am very excited to be in this group, cooking along with dear friends, and enjoying a new adventure!Thank you to the Three French Hens and their Chickadee for managing this group!

The author of the book says the first thing she tells her students is that a shallot is not an onion.  Well in my household, if it looks like an onion, smells like an onion, and tastes like an onion, husband does not eat it!  I did the recipe exactly as written however and it was quite tasty.  I love fresh tomatoes and the dressing was a simple Dijon mixed with olive oil and it was very flavorful.  Very easy to put together and delicious compliment to our meal.  The salad consisted of fresh tomatoes, parsley, shallots and a Dijon dressing.

Looks really great. About Chandler and those onions...Mark eats shallots if I dice them up teeny tiny and he doesn't want to bother picking them all off...lol. So you can try that (that's how Mark learned to like shallots, he still doesn't eat raw regular onion no matter how teeny tiny I dice). Or you can just dice them big so they are easy to pick off...lol. :-) Sometimes you just have to call it a day on converting people...like me and chocolate, right? :-) Your dish looks beautiful. Now with all the excitement of this group this weekend, I have to get busy and get my dishes done for WWDH and EwE and 30 Minute Thursdays...yikes, have we lost our minds?? I'll probably make desserts again when Matt lands back in town at the end of the month as he and his cousin are great places to park dessert! Happy Sunday!

Looks lovely! I read a tip from another member of our group that said to rinse the shallot in cold water after chopping to remove some of the strong aroma and oniony flavor - I'm going to try that today!

Yes, Sue is right ... (and it was my daughter who made that suggestion!) ... cut the shallots, put them in cold water and let them soak for a bit. It draws out the bite. Truth is, when I cook with shallots, I often hope Emily and her little family will be at our house so I can ask her to chop the shallots because my eyes water so much. Lovely lovely summer salad!

YES, the shallots need to soak for a while! A long while. Even for those of us who *do* like onions :)

LOL I still put shallots in the onion family.... regardless of what anyone wants to say. And tomatoes are a veggie for me, not a fruit. LOL but I love the look of your toms! FRESH! :)
