Good Food Good Friends - Corn Salad with Fritos

 

This week in our GFGF group we are focused on corn, which was my pick.  Unfortunately, it is not really corn season right now so I chose to use canned.  We love this salad.  I have made it quite often through the years and we never tire of it.  Just be sure you add your Fritos right before eating.  And, because this salad is not good the next day if you mix the Fritos in, I usually just add mine to the salad on my plate.  

Next time, we are going to start a new focus and have salad recipes.  Be sure to check back.

Recipe:

2 cans (15 1/2 oz) whole kernel corn
1/4 cup chopped red onion
1/4 cup chopped bell pepper 
1 avocado cut in chunks
2 roma tomatoes chopped
1 cup mayonnaise
1/2 bag Chili Fritos crunched for topping

Mix all and chill. Add Fritos right before serving.

I would never have thought of sprinkling Fritos on a salad.

Oh, I have all this on hand and I will try this today for the guys, looks like a good lunch for baseball watching today. Great tip on adding the chips right before eating. A new form of Walking Taco!
