Good Food Good Friends - Artichoke Antipasto Salad

 



 
This week in our GFGF group, Donna chose artichokes for our main salad ingredient.  We will be sharing salad recipes for this session in our group. 

I personally am not wild about artichokes.  They fall in the category of just okay with me.  I would rate them a five out of ten on a yummy scale.  But this salad....this salad is chock full of deliciousness.  Maybe it is just the unusual mixture of ingredients that makes it good.  We enjoyed it as our main entree for dinner.  Its good and there are so many other ingredients one could add.

Recipe:
Cook one package of cheese tortellini according to package directions and drain.  Mix with one small jar drained, marinated artichokes, one package cherry tomatoes sliced in half, about 1/2 cup mozzarella slices, black peppered salami, queen olives and some garlic butter croutons to top.  Mix all and top with italian dressing.  Enjoy!

I like fresh artichokes, boiled with different kinds of sauce. Dipping dip one leaf at a time in sauce and sizzle the flesh from the bottom until the heart is mine.
