GFGF - cranberry Orange Walnut bread


This week in our Good Friends Good Food group our theme was Season of Blessings which gave us a choice.  I chose to make a holiday bread using the fresh cranberries that were included in my vege coop this week.  The recipe I used is below.

The recipe made two loaves so I took one to a friend and kept the other for us to enjoy.  It is an easy recipe except chopping those cranberries proved a challenge.  I did it by hand and they kept rolling off the cutting board.  Quite amusing!  This seemed like a pretty bread for the holidays!  We love anything cranberry.

CRANBERRY orange WALNUT BREAD

 Prep Time 15 minutes
 Cook Time 55 minutes
 Cooling Time 10 minutes

  • 2 3/4 cups all purpose flour
  • 1 1/4 cups sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 egg
  • 1 cup milk 2 % preferred
  • 1/2 cup orange juice
  • 2 to 3 teaspoons orange zest from 1 medium orange
  • 1/8 cup oil
  • 2 1/2 cups fresh cranberries coarsely chopped
  • 1 1/2 cup chopped walnuts divided

Ingredients

  • 2 3/4 cups all purpose flour
  • 1 1/4 cups sugar
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon cinnamon
  • 1 egg
  • 1 cup milk 2 % preferred
  • 1/2 cup orange juice
  • 2 to 3 teaspoons orange zest from 1 medium orange
  • 1/8 cup oil
  • 2 1/2 cups fresh cranberries coarsely chopped
  • 1 1/2 cup chopped walnuts divided

Instructions

  1. Preheat oven to 350 degrees Fahrenheit. Grease two 8x4 inch loaf pans. Set aside.
  2. In large bowl, combine flour, sugar, baking powder, salt and cinnamon. Set aside.
  3. In medium bowl, whisk together egg, milk, orange juice, orange zest and oil. Add to dry ingredients and stir until fully combined.
  4. Fold in coarsely chopped fresh cranberries and 1 cup chopped walnuts.
  5. Pour evenly into two loaf pans.  Top with remaining 1/2 cup chopped walnuts.
  6. Bake for 50 to 55 minutes or until golden brown and toothpick inserted in center comes out clean.
  7. Cool 10 minutes before transferring to wire rack to cool completely.

Recipe Notes

These loaves can be wrapped and frozen. Thaw at room temperature
