Eating with Ellie - Lemon Chicken with Artichokes, Capers and Arugula




This week I chose a chicken recipe from Ellie’s newest book.  With the new year, and the pandemic all around us, it feels great to prepare a recipe that you know is not only healthy but delicious.  It is very easy to make.  It takes very little preparation and is finished in about thirty minutes.  This will definitely be on our regular dinner rotation.  It has a nice flavor!

That does look really good and I’m going to mark it in my book to try soon. I’m loving this new book. Mark selected another pork recipe for next week so I’m going to do that one for him and then come for this chicken. Nice photo!
