TWD - Steph’s Bakewell Tart

What is a Bakewell Tart, you might ask.  Apparently it all began in Derbyshire, England.  I had no idea it was popular with  The Great British Baking Show.   This classic  combines a buttery shortcrust pastry with a filling of raspberry jam, (or in my case blackberry jam), topped with an almond spongecake and almond slices. I think there are probably many different versions of the Bakewell. On my first attempt, my crust totally fell apart in the oven.  At that point, I went to plan b and made four mini tarts.  These worked perfectly for us.  I have a very thin layer of the jam and wish I had used a bit more.  We enjoyed this and it was a breeze to put together.   Check out Tuesdayswithdorie.wordpress.com for others.

Eating with Ellie - Lemon Chicken with Artichokes, Capers and Arugula

This week I chose a chicken recipe from Ellie’s newest book.  With the new year, and the pandemic all around us, it feels great to prepare a recipe that you know is not only healthy but delicious.  It is very easy to make.  It takes very little preparation and is finished in about thirty minutes.  This will definitely be on our regular dinner rotation.  It has a nice flavor! Baking with Dorie - Grain and Seed Muffins

Tuesdays with Dorie brings us Grain and Seed Muffins.   We are muffin lovers.  Love them with breakfast or just as a snack.  These muffins presented me with a challenge because they called for oats and I am allergic.  So I substituted raisin bran cereal for the oats and it worked beautifully.  However, after putting these in the oven, I ate some leftover sunflower seeds and had a reaction.  So I will have to make these again and leave out those seeds!  I have never heard of a sunflower seed allergy but apparently…have you?  I also added some pecan chips to these because I love nuts in everything.  My husband who is a great taste tester for me says these are great!  Guess I will have to take his word for it . Eating with Ellie - Pork Tenderloin with Seasoned Rub

   So we are trying to start the new year off right by eating healthier!  We are tired of ham and turkey having consumed a hefty portion of those during the holiday.  Tonight I decided to prepare Ellie Krieger’s pork tenderloin.  It has been a while since we had tenderloin.  This was easy to prepare.  First you rub with spices.  Then sear the tenderloin in the skillet, then transfer to the oven.  Easy peasy.   Will definitely put on my dinner rotation.  I served with roasted carrots and some green peas Not the best photos but delicious . WWDH - Classic Spaghetti and Meatballs

So the holidays are over.   I feel like we have been eating nonstop for weeks.  Tonight I just wanted some comfort food and Donna Hay was there for me with classic spaghetti.   I did make a couple substitutions to the recipe because I did not have any pork and I did not have any basil leaves.   I am married to a guy who could eat pasta every meal of his life and be happy.   You cannot go wrong with this recipe!
