EwE - Soup's On!

Image
This week in our Eating with Ellie group we are making soup!  Soup is one of my favorite things to prepare.  I chose Ellies fall vegetable soup.  While I know it is not fall, it certainly feels like it here in Alabama this week!  So it seemed like a good fit for the weather!  We have had some beautiful weather lately.   I changed a few ingredients. I do not care for chickpeas so I just added some diced mixed vegetables.  I did also add diced butternut squash which the recipe called for. It smells so good cooking!  I used spinach instead of kale. This was a very flavorful soup!  We loved it.  Will definitely be making this again.  You can get the recipe  Here  or purchase Ellie Krieger's Weeknight Wonders . You can check out our website Here

EwE - Barnyard Fun!

Image
This week in our Ellie krieger group it was my turn to choose the theme!  I chose barnyard fun. So you could make anything that came out of a barnyard!  I chose Ellies herbed pork tenderloin.    Pretty simple to make.  You make a mix of the dry spices and rubs on to the tenderloin.  Then you sear it in a skillet for 10 minutes.   Then finish cooking in the oven on 450.  I made some ranch potatoes to go with it.  Served up along side i made my new favorite dish of zucchini, tomatoes and kalamata olives.   Just fry that up together in a bit of olive oil until zucchini is tender.   This was a great meal. I love all of Ellies cookbooks that I own. You can easily go to Amazon and order yourself one.  You can also find the recipe online  Here Check out our website to see what the others in the group made.   Here

Cookies with Dorie - World Peace!

Image
It seems very fitting in these times of unrest and division our nation is experiencing right now to make Dorie's World Peace cookies.  These are simple to make and simply delicious.  I made this once before when we were in the Tuesday with Dorie group.  I had forgotten how good they really are! Some friends were having us over to learn to play a card game called "hand and foot."  I was to bring a sweet.  So I killed two birds with one stone and took these World Peace cookies.  They were a big hit and we absolutely LOVED the hand and foot card game!  I am sure we will be playing it lots in the upcoming months. My darling husband got me the Cookies with Dorie cookbook for Christmas.  I am looking forward to making every single cookie in that book! The cookie ingredients included flour, brown sugar, cocoa, butter, vanilla flavoring, sea salt and regular sugar.  You just mix up and then roll the dough into a log and freeze for a few...

Ewe - it's beginning to look a lot like Christmas!

Image
I am running a couple of days behind!  I would be willing to bet some of you are as well?  After all tis the season!  Kayte chose as our theme this week to do foods regarding Christmas. There are so many choices out there. I decided to think outside the box and make a little healthy breakfast dessert. You could eat it at anytime of the day. But we chose to add it to our Christmas Eve breakfast as a special treat. It is extremely easy to whip up. It is vanilla yogurt, frozen raspberries, whipped cream and confectioner sugar.  I did not add the confectioners sugar but instead added a teaspoon of peach schnapps just to seem a little more festive!  The name of the dessert is raspberries fool.  Not sure why Ellen Krieger called it that but it is delicious.  We thoroughly enjoyed our little treat and the added sugar was not needed.  You can find the recipe online. Blessings to your family during this holiday season and happy new yea...

TWD...Christmas Spiced Cookies

Image
This is my second of the two choices for cookies this month.  The first was pfefferneusse and this one are spiced Christmas cookies.  They are basic  Dorie's Good for Almost Anything Vanilla Sugar Cookie dough mixed with Christmas spices, cut into shapes, sprinkled with sugar and baked.  Instead of adding more sugar sprinkling on top, I sprinkled a few of mine with extra cinnamon.  These cookies are tasty and easy to make!   Who could not like a good spicy cookie!   Happy holidays to all! EWE - nuts and Such

Image
I chose our theme this week and it is nuts and such for our Ellie Krieger group.  I know with that title you were probably expecting NUTS or such.  You are getting the such, with nuts on top!  I was planning to make Ellie's spiced nuts,  but then I saw this Sweet Potato  casserole and decided to go with that.  It is, after all, topped with pecans!  Since there are only two of us here, I decided to just put it into two little ramekins to bake instead of doing an entire 9 x 13 casserole.  It worked great for us!   We love love love sweet potatoes!  I'm so thankful I have a husband who will eat almost anything that I cook.  The exceptions are onions and bell peppers, and turnip greens.   I even have him eating grits now! This is a healthy version of the old tried-and-true recipe we all made years ago for Thanksgiving.  I loved it. You can find the recipe  Here Our website is  Ellie

EWE - When life gives you lemons...

Image
Gaye chose our theme this week for our Ellie Krieger group.  When Life Gives You Lemons.  I am a huge huge fan of lemons.  Love the lemon in my tea.  My dh does not like lemon in his so he always gives me his slice.   There were so many different ways I could have gone with this theme.  I chose Ellie's 25 minute lemon orzo  pilaf.   This was so easy to make and I do not believe it took even 25 minutes!
