Tuesdays with Dorie - Apple Pandowdy

This  week in Tuesdays with Dorie I chose to make the Apple Pandowdy.  This is my third recipe to make out of Dorie Greenspan’s newest book,   Sweet, Salty and Simple .  I could not believe how easy it was to make this. It is a beautiful dessert.  I will be making a second one to serve with our Thanksgiving feast.   According to my google search, the name “pandowdy” is said to come  from the “dowdy” appearance of the top crust—it ends up rumpled and messy .   This dish is usually baked in a pan rather than a pie dish, perhaps creating the first part of the name.  I think I read that people break up the crust and mix in with the apples making it even more rustic looking.   Dorie’s addition of lemon to the apples comes as quite a surprise on your first bite.  It is a bit tart.  But the more we ate, the more we liked it.  I love apples and I love lemon so it was a hit for me. Eating with Ellie - Roasted Provencal Salmon and Fennel

Ellie Krieger….such good healthy recipes!  I decided to try this recipe because my husband loves salmon!   Even though I have a shellfish allergy I thought I could eat this.  One bite told me I cannot!  But the DH thought it was great so I am glad I tried it for him.  It made such a pretty dish.  And if you are looking for an easy salmon dish, this fits the bill.  Easy preparation and quick to cook.  I loved the fennel. WWDH - Quinoa Roasted Chicken with Olive Gremolata

Eating with Ellie - Oven Fried Chicken

This week I made Ellie Krieger’s oven fried chicken.  I was very excited to make this and it was so delicious.   Then I checked back through my blog and found out that I had made this previously years and years ago!  I decided it was so good that I would post again today .  I made just a few changes.  Ellie calls for cornflakes and whole grain crackers for the crust.  I used Ritz crackers because that is what I had on hand.  We loved this chicken and will have it again and again! WWDH - Roasted Eggplant with Smoked Mozzarella and Oregano Crumbs

  I wanted to try something different for eggplant than my normal parmigiana.  I searched through Donna Hays internet recipes and found this one.  It did not disappoint!  We served it with a nice filet and baked potato.  It is also very easy to make.  The tomatoes are mixed with sat, pepper and brown sugar.  The eggplants are drizzled with olive oil.  After baking thirty minutes you top with sourdough croutons, oregano leaves and smoked mozzarella.  Then serve with a drizzle of pesto.  It was a very nice side dish.  I would definitely make this again. TWD - ENGLISH MUFFINS

This week in Tuesdays with Dorie we made english muffins.  This is my second recipe to make out of Dorie Greenspan’s newest book, Sweet, Salty and Simple .  I will admit that anything to do with yeast scares me a bit.  I have had some very big flops with baking with yeast.  I was hesitant to make these for that reason.  But I followed Dorie’s instructions and they turned out really well.  We really enjoyed them with our breakfast. GFGF - Savory Carrot Cashew Soup

  For our Good Friends Good Food group, our theme is fresh produce. I made Ellie Krieger’s carrot soup.  You can find this recipe in her book called Weeknight Wonders .  I really do not think I have ever made a cream type soup.  We are more the chunky meat and vegetables type of soup eaters.  But I really wanted to try this and I was not disappointed.  This soup is creamy and tasty.  It is a mixture of carrots, garlic, onion, ginger, honey and cashews cooked in chicken broth.  Once cooked, Ellie said to puree in blender in four batches.  Well I thought why do it in four batches when I could do it in two?  There is a reason for sure.  If you could see my kitchen right now you would understand.  Lesson learned, listen to the experts and follow their directions.  My first touch of the switch blew the lid off my blender along with about a third of the soup!  So then I scooped out a bit and tried again only to have the sam...

Wednesdays with Donna Hay - Basic Banana Bread

First, let me say there is nothing basic about this bread.  Another banana bread recipe you may ask.  Yes, but this bread is so delicious.  I think of myself as a bit of a banana bread connoisseur. That is, I have tried lots of recipes and eaten many slices.  This bread checks all my boxes.  It will make your kitchen smell yummy.  It has just the right amount of sweetness, banana and cinnamon.  We loved it!  This recipe can be found in Donna Hays book called Fresh and Light .
