TWD - Steph’s Bakewell Tart

What is a Bakewell Tart, you might ask.  Apparently it all began in Derbyshire, England.  I had no idea it was popular with  The Great British Baking Show.   This classic  combines a buttery shortcrust pastry with a filling of raspberry jam, (or in my case blackberry jam), topped with an almond spongecake and almond slices. I think there are probably many different versions of the Bakewell. On my first attempt, my crust totally fell apart in the oven.  At that point, I went to plan b and made four mini tarts.  These worked perfectly for us.  I have a very thin layer of the jam and wish I had used a bit more.  We enjoyed this and it was a breeze to put together.   Check out Tuesdayswithdorie.wordpress.com for others.

Eating with Ellie - Lemon Chicken with Artichokes, Capers and Arugula

This week I chose a chicken recipe from Ellie’s newest book.  With the new year, and the pandemic all around us, it feels great to prepare a recipe that you know is not only healthy but delicious.  It is very easy to make.  It takes very little preparation and is finished in about thirty minutes.  This will definitely be on our regular dinner rotation.  It has a nice flavor! Baking with Dorie - Grain and Seed Muffins

Tuesdays with Dorie brings us Grain and Seed Muffins.   We are muffin lovers.  Love them with breakfast or just as a snack.  These muffins presented me with a challenge because they called for oats and I am allergic.  So I substituted raisin bran cereal for the oats and it worked beautifully.  However, after putting these in the oven, I ate some leftover sunflower seeds and had a reaction.  So I will have to make these again and leave out those seeds!  I have never heard of a sunflower seed allergy but apparently…have you?  I also added some pecan chips to these because I love nuts in everything.  My husband who is a great taste tester for me says these are great!  Guess I will have to take his word for it . Eating with Ellie - Pork Tenderloin with Seasoned Rub

   So we are trying to start the new year off right by eating healthier!  We are tired of ham and turkey having consumed a hefty portion of those during the holiday.  Tonight I decided to prepare Ellie Krieger’s pork tenderloin.  It has been a while since we had tenderloin.  This was easy to prepare.  First you rub with spices.  Then sear the tenderloin in the skillet, then transfer to the oven.  Easy peasy.   Will definitely put on my dinner rotation.  I served with roasted carrots and some green peas Not the best photos but delicious . WWDH - Classic Spaghetti and Meatballs

So the holidays are over.   I feel like we have been eating nonstop for weeks.  Tonight I just wanted some comfort food and Donna Hay was there for me with classic spaghetti.   I did make a couple substitutions to the recipe because I did not have any pork and I did not have any basil leaves.   I am married to a guy who could eat pasta every meal of his life and be happy.   You cannot go wrong with this recipe! TWD - Cheese Puffers

  This week in Baking with Dorie I chose cheese puffers.  With the busy holidays upon us, these were perfect to add to our weeknight dinner.  They were quick and very easy to make.  While having the appearance of an ordinary muffin, these were light and cheesy….more like a popover.  We loved them and will definitely make again. GFGF - cranberry Orange Walnut bread

This week in our Good Friends Good Food group our theme was Season of Blessings which gave us a choice.  I chose to make a holiday bread using the fresh cranberries that were included in my vege coop this week.  The recipe I used is below. The recipe made two loaves so I took one to a friend and kept the other for us to enjoy.  It is an easy recipe except chopping those cranberries proved a challenge.  I did it by hand and they kept rolling off the cutting board.  Quite amusing!  This seemed like a pretty bread for the holidays!  We love anything cranberry . Baking with Dorie - Mokonut’s Rye Cranberry Chocolate Chunk Cookies

In our BWD group this week, I chose to make the Mokonut cookies.  I had never used rye flour before so this was a first for me.  The problem was finding it in stock.  I think I visited five or six local grocery stores before finding it.  Sprouts had one bag left and I got it! Good Friends Good Food - Butternut Squash, Apple, Cranberry Bake

  This week in our GFGF group the theme was something you might add to your holiday table.  I wanted to do something with squash because I pretty much love all things squash.  This is a very simple recipe. The hardest part is cutting up the butternut squash.  But believe me it is worth it!   This dish is delicious and beautiful.  It would definitely be welcome at a holiday table or just for a weekly dinner. I served it with baked pork chops and asparagus.  Beautiful and delicious.  I might cut down on the sugar when I make it again.  The apples are naturally sweet and probably half the sugar would be enough. Tuesdays with Dorie - Apple Pandowdy

This  week in Tuesdays with Dorie I chose to make the Apple Pandowdy.  This is my third recipe to make out of Dorie Greenspan’s newest book,   Sweet, Salty and Simple .  I could not believe how easy it was to make this. It is a beautiful dessert.  I will be making a second one to serve with our Thanksgiving feast.   According to my google search, the name “pandowdy” is said to come  from the “dowdy” appearance of the top crust—it ends up rumpled and messy .   This dish is usually baked in a pan rather than a pie dish, perhaps creating the first part of the name.  I think I read that people break up the crust and mix in with the apples making it even more rustic looking.   Dorie’s addition of lemon to the apples comes as quite a surprise on your first bite.  It is a bit tart.  But the more we ate, the more we liked it.  I love apples and I love lemon so it was a hit for me. Eating with Ellie - Roasted Provencal Salmon and Fennel

Ellie Krieger….such good healthy recipes!  I decided to try this recipe because my husband loves salmon!   Even though I have a shellfish allergy I thought I could eat this.  One bite told me I cannot!  But the DH thought it was great so I am glad I tried it for him.  It made such a pretty dish.  And if you are looking for an easy salmon dish, this fits the bill.  Easy preparation and quick to cook.  I loved the fennel. WWDH - Quinoa Roasted Chicken with Olive Gremolata

Eating with Ellie - Oven Fried Chicken

This week I made Ellie Krieger’s oven fried chicken.  I was very excited to make this and it was so delicious.   Then I checked back through my blog and found out that I had made this previously years and years ago!  I decided it was so good that I would post again today .  I made just a few changes.  Ellie calls for cornflakes and whole grain crackers for the crust.  I used Ritz crackers because that is what I had on hand.  We loved this chicken and will have it again and again! WWDH - Roasted Eggplant with Smoked Mozzarella and Oregano Crumbs

  I wanted to try something different for eggplant than my normal parmigiana.  I searched through Donna Hays internet recipes and found this one.  It did not disappoint!  We served it with a nice filet and baked potato.  It is also very easy to make.  The tomatoes are mixed with sat, pepper and brown sugar.  The eggplants are drizzled with olive oil.  After baking thirty minutes you top with sourdough croutons, oregano leaves and smoked mozzarella.  Then serve with a drizzle of pesto.  It was a very nice side dish.  I would definitely make this again. TWD - ENGLISH MUFFINS

This week in Tuesdays with Dorie we made english muffins.  This is my second recipe to make out of Dorie Greenspan’s newest book, Sweet, Salty and Simple .  I will admit that anything to do with yeast scares me a bit.  I have had some very big flops with baking with yeast.  I was hesitant to make these for that reason.  But I followed Dorie’s instructions and they turned out really well.  We really enjoyed them with our breakfast.
